Bruschetta offers an impressive array of nutrients. It makes both a great appetizer or snack. There is no frying involved, and it is easy to put together. Except it’s a bread-based recipe and, for people trying to lose weight, bread doesn’t often make the list of approved diet foods. This is why we created a healthy alternative to traditional bruschetta that utilizes parmesan crisps instead of bread.

Parmesan Balsamic Bruschetta Recipe
  • 8 Roma plum tomatoes, diced
  • 1/3 cup chopped basil
  • 2 cloves garlic, minced
  • 1 Tbsp balsamic vinegar
  • 1 tsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • low-fat shredded parmesan cheese*
  • In a bowl, toss together the tomatoes, basil, and garlic
  • Mix in the balsamic vinegar, olive oil, kosher salt, and pepper
    *Serve on parmesan crisps
  • Place mounds of low-fat shredded parmesan cheese 2″ apart on tin foil
  • Bake in the oven on 350 until melted and brown
  • Cool and use as chips

Servings: entire recipe = 2 vegetables, not including parmesan crisps
