Cauliflower is one of the best veggies. Mostly because you make just about anything with it including this amazing recipe. This cauliflower rice recipe with smashed avocado, jalapeno, lime juice, and cilantro and makes for a delicious side dish. It’s time to take your cauliflower rice to a new level of delicious.
Avocado Cauliflower Rice Recipe
- 2.5 c cauliflower rice
- 1 tbsp olive oil
- 1 c diced yellow onion
- 3 cloves garlic, minced
- 2 Hass avocados, diced
- 1 jalapeno, diced
- 2 tbsp lime juice
- 1/2 c roughly chopped cilantro
- salt and pepper to taste
- Heat a large saute pan over medium heat. Add oil and let it get hot. Add diced onions and saute for 5 minutes until translucent, stirring occasionally. Add garlic and cook for another minute. Add the cauliflower rice and let cook 5-6 minutes, stirring occasionally.
- While the rice cooks, make the avocado mash. In a separate bowl, add avocados, diced jalapeno, lime juice, sand salt, and pepper and mash with a fork until combined (but allow some texture to remain).
- Once cauliflower rice is cooked, remove from heat. Add avocado mixture to the cauliflower rice and mix well to combine. Stir in cilantro and enjoy!
