Healthy Recipe | Caprese Skewer

INGREDIENTS:

  • 2 pints cherry or grape tomatoes
  • 1 pound fresh buffalo mozzarella
  • sea salt
  • 1 bunch fresh basil
  • ground black pepper
  • extra-virgin olive oil

INSTRUCTIONS:

  1. Thread ingredients onto skewers in this order: cherry tomato, fresh basil leaf, fresh buffalo mozzarella, fresh basil leaf, cherry tomato.
  2. Sprinkle skewer with sea salt and black pepper.

3 Skewers = 1/2 protein serving and 1/4 vegetable.
