Ron’s Cheese Itz with Guacamole Recipe


Ron’s Cheese Itz

  • 1 lz Cabet Low Fat Pepper Jack, Swiss Cheese or Cheddar
  • 1 sheet parchment paper


  • 1/2 avocado
  • 2 tbsp lemon juice
  • 1/4 cup raw purple onion
  • 1 tsp salt
  • 1/2 cup tomatos


Ron’s Cheese Itz

  1. Slice the rectangle cheese in half (makes about 12-16 pieces)
  2. Lay all cheese squares on parchment paper and microwave for 1 – 1 1/2 minutes. The cheese should be raised with pinpoint bubbles. Do not worry to over cook.
  3. Let sit for 1-2 minutes. Serve.


  1. Mix all ingredients together until slightly smooth. Can be used as a dip, dressing, and sauce topping.

Servings: whole recipe = 2 veg servings (guacamole)
