Bruschetta offers an impressive array of nutrients. It makes both a great appetizer or snack. There is no frying involved, and it is easy to put together. Except it’s a bread based recipe and, for people trying to lose weight, bread doesn’t often make the list of approved diet foods. This is why we created a healthy alternative to traditional bruschetta that utilizes parmesan crisps instead of bread.
Parmesan Balsamic Bruschetta Recipe
INGREDIENTS
- 8 Roma plum tomatoes, diced
- 1/3 cup chopped basil
- 2 cloves garlic, minced
- 1 Tbsp balsamic vinegar
- 1 tsp olive oil
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- low fat shredded parmesan cheese*
DIRECTIONS
- In a bowl, toss together the tomatoes, basil and garlic
- Mix in the balsamic vinegar, olive oil, kosher salt and pepper
*Serve on parmesan crisps
- Place mounds of low fat shredded parmesan cheese 2″ apart on tin foil
- Bake in oven on 350 until melted and brown
- Cool and use as chips
Servings: entire recipe = 2 vegetables, not includnig parmesan crisps
