Healthy Recipe: Italian Konjac Pasta

INGREDIENTS:

  • 1 packet of konjac noodles
  • 1/2 tsp olive oil
  • 1/2 cucumber, diced
  • 1/2 bell pepper chopped
  • 1 tomato, diced
  • 1/2 onion diced
  • 9 oz sugar-free tomato sauce
  • 4 oz Italian dressing (use spray dressing)

INSTRUCTIONS:

  1. Drain and rinse konjac pasta with cold water. Then drain and add olive oil. Add remaining ingredients. Add red wine vinegar to taste.

Serving size: 2
