Healthy Recipe: Chicken Verona

INGREDIENTS:

  • 1 lb boneless, skinless chicken breasts

Coating Mix: Part 1

  • 3/4 c 0-calorie butter spray
  • 1 garlic clove minced

Coating Mix: Part 2

  • 1 c grated parmesan cheese
  • 1/4 c dried parsley
  • 1/4 tsp pepper
  • 1 pinch of dry mustard

INSTRUCTIONS:

  1. Mix cheese, parsley, pepper, and mustard and set aside
  2. Combine butter spray and minced garlic in a bowl
  3. Drip chicken in butter spray mixture
  4. Dredge chicken in cheese mixture coating both sides and arrange in a single layer in a shallow baking pan
  5. Drizzle remaining butter mixture over top and bake in preheated oven at 350 degrees for about 45 minutes

Servings: 16 oz protein (divide and weigh for correct serving needed)
