Baked Tilapia with Vegetables

INGREDIENTS:

  • 4 1/2 oz tilapia
  • 1 summer squash, sliced
  • 1 zucchini, sliced
  • 1 tomato, sliced
  • 1 red onion, sliced
  • kosher salt, to taste
  • fresh herbs to your liking
  • olive oil spray

INSTRUCTIONS:

Place fish in bake ware with sliced squash, zucchini, tomatoes, and onion. Sprinkle with kosher salt. Spray with olive oil. Add fresh herbs. Bake at 350 degrees for about 30-35 minutes or until fish flakes.
